Attention Potato Salad Police: Rogue Potato Salad Spotted

Attention all units…a rogue potato salad has been spotted at the canaryhouse.  Please use extreme caution when approaching…this salad has NO recipe.  It has NOT been tested 100 times.  If you see this salad, grab a fork and sit down quickly.  Quietly.  And apprehend that sucker before anyone tries to get in the way. 

As I’m sure you’re all aware, Melissa at Alosha’s Kitchen had a run in with the folks at Cook’s Country/America’s Test Kitchen/Cook’s Illustrated, where she had adapted a recipe of theirs, noted her changes and credited the source…but that was apparently unacceptable behavior, because their recipes are PERFECT and are not to be changed by anyone, fer cryin’ out loud.  In my opinion, they can stuff their so called perfect recipe.  Recipes are *meant* to be changed, adapted, and perfected in our own ways.  Perfection in the kitchen isn’t measured in precise measurements and techniques, it comes from being creative, being happy and having fun.  If the folks over at CC/ATK/CI don’t see that, well, there’s something wrong in *their* kitchen. 

So, with that, I offer you my humble potato salad.  I’ll give you the ingredients I used, but I’m not posting a recipe, just the ingredient list. Personal adaptation and creative expression are encouraged. I was out of celery, so there’s none in there, but hey…I worked with what I had, and it tasted freaking awesome.  SO there.  I’d also like to enter this subversive salad into this month’s Potato Ho Down Event, hosted by Evil Chef Mom

Yes indeed…not only do I have rogue non-recipes, I’m a ho too. ;)  Deal with it. lol

Ingredients:

potatoes, cooked, peeled and diced
boiled eggs, peeled and chopped
red onion
garlic
celery (if you’ve got it)
mayonaise
sour cream (or quark cheese or Greek yogurt)
mustard
sugar
red wine vinegar
salt and cracked black pepper
parsley

Preparation:

Mix up the dressing ingredients and pour over chopped potatoes and eggs.
Feel free to add more stuff like peas, peppers, green onion etc.
Combine.
Taste it to make sure you like the seasonings and the tang factor.
Let sit in the fridge for an hour or so.
It’s even better the next day.

  3. I read that post and was outraged by the so-called PR expert. She knows s**t about her job! Anyway, I haven’t heard about those guys before (as I live in Europe) and I was sure not to remember their name because of the incident otherwise they woud’ve won.
    Love your potato salad and the fact that their’s no strict recipe attached to it :) . Looks creamy…simply heaven!

  7. That whole episode was a disgrace for the foodie community. I personally don’t think CC/ATK/CI’s are that good anyway, and if you can’t change a recipe to adapt it to your family’s likes, then what good the recipe is? We are not robots, you know. Hehe. Great potato salad. I think we all should boycott them :-p

  13. Hmm, I don’t know if I can be trusted to make my own potato salad. After all, I don’t have time to test it 100 times. I love boiled eggs in potato salad but always forget to add them when making it. Yours looks very cream; yum!


  14. Que rico, fuera magnifico acer una “ensalada russa” con un alioli de ajo. Ya que estamos en el tema de “patatas” o “papas” dependiendo como se acustumbre a decir.

    Sabes ya me acistes sentir mal porque abeces se me pasa la mano y me oigo medio aggressivo y como que estubiera regañando quando ablo de comida eso me paso con mi “Picadillo” critique tanto a una pobre Americana, pero luego me senti mal y dije, “Coño que malo fui, si ella le encanta dejala vivir”

    Porque muchas veces quando viene a comida cubana soy un poco intolerable de lo “creativo” abeses si digo, “Pero que coño es eso?” quando son muy creativos y se les pasa la mano, pero bueno mejor guardo mis pensamientos negativos y doy critiqa constructiva en ves.

    Pero si las recetas muchas veces son de gusto en gusto, pero ay caracteristicas que uno exije en siertos platillo, pero argo como ensalada de papa es muy flexible esa jente mala que se lo criticaron se pueden ir al carajo.

    Jeje que horrible escribo español es una verguenza pero bueno me gusta practicarlo y no es tan malo por no ser aprendido en escuala jaja, yo solo leyendo y tambien porque me crie con el lenguaje.

    No tengo azafran pero como colorante voy a utilizar “Bijol” (achiote en polvo mezclado con tantito comino) muy comun en la cocina cubana.

  16. there are certain dishes that are just perfect for summer and all the barbecues and picnics and parties that it brings, and potato salad is one. i like the looks of yours–it’s purty. i’m gonna require a lot of mustard and very little mayonnaise in mine. :)

Ah, y en esta ensaladilla si puse un poquitín de alioli. jeje Mezclé un poco de mayonesa normal con alioli para que no estuviera demasiado fuerte con el ajo…la ensaladilla rusa me gusta con más ajo, pero esta versión es de mi infancia en los EEUU. :) Bueno chico…te dejo, porque hoy es sábado y toca limpiezaaaa a fondo. :P Hasta pronto, amigo!

  25. OMG! I’ve been a subscriber to CI and their website for years. I’ve also modified any number of their recipes, mostly to substitute for dairy (I keep kosher and can’t mix meat with dairy). I guess the lesson here is obfuscation is the best policy – in other words, just don’t say where you got your inspiration in the first place. Sucks!

    BTW – I’m going to try your potato salad. Sounds yum! I hope you don’t mind that I substitute non-dairy soy yogurt for the sour cream! I just won’t blog about it… :-)
