Im on a scavage hunt for a recipe that I cant find. I was around 11 Years old (about 13 years ago) when I went to Tenerife with my Parents. There was this one restuarant in Adeje where we had this chicken and potaotoe dish. Till this day, I cannot forget that chicken and the fact that it was the best i’ve ever had. The most details i know about this dish that it was served with small plain potaotes and the chicken was put in the oven with some red sauce. The chicken had sucked in all the juices of this sause and left some on the bottom of the clay dish pan…
Please help me find this recipe or something similar….

Hello Fadi!
Nice to “meet” you. I think the recipe you are looking for is called, “pollo en adobo,” (chicken in adobo sauce)…I can probably get around to posting it soon, but I will give you the basic ingredients now if you’d like to experiment on your own:
garlic, cumin, oregano, thyme, smokey paprika, olive oil, white wine and sea salt and water….parsley optional
It’s important to let the meat marinate for several hours before cooking…after marinating, sear over fairly high heat, then cover and reduce heat to low and simmer for at least 45 minutes, adding water as necessary…you want to keep the water level about halfway up the meat. (or alternatively, cover and bake at 190ºC for 45 minutes to an hour) Hope this helps!
