Hey Puddin’! Want some Puddin’?
Cho-co-late Pudding….man o man is this stuff good. I have been craving chocolate pudding for weeks and weeks, and the other day finally did a search for recipes. Would you believe I had never made pudding from scratch before? Sure, I’ve made the packaged cook and eat kind, but never made pudding from the bare bones ingredients. It’s kind of funny, I think I’ve made just about every other type of chocolate concoction known to man, and never this one…creamy, silky smooth deliciousness ready to transport you back to your childhood in an instant. :) Mallow over at PieTown posted this recipe originally, and I heeded her advice to add less sugar. Since I copied the recipe pretty much word for word, I’ll just note that I reduced the sugar to 2/3 cup, and for gluten free, to be sure to check the cocoa powder label to make sure it’s certified gf. Enjoy!

So funny - I overlooked trying homemade pudding for years too, and when I finally did it, I was shocked at how easy and TASTY it was! Gorgeous photo, by the way!

I just made a homemade milk chocolate pudding too!!! Mine came out a bit like frosting - yours looks better but it was still delicious!

The Pie Town recipe is overkill on the calories. It includes ingredients that you’ll find are unnecessary for making chocolate pudding, namely the eggs and butter. That would make it more of a mousse or custard than a pudding I think. The lack of eggs makes it a technically simpler recipe as well. I’ll share my simpler and lighter pudding recipe. It’s yummy and considerably lighter.
I should say, I prefer dark chocolate, so this pudding is even less sweet than the blog recipe. Increase the amount of sugar to taste. I use 2% milk, but you may use other. And the chocolate chips are optional, you can leave them out for a less chocolaty pudding.
Makes 4-6 servings. Prep time under 10min.
2 cups 2% milk
1/2 cup sugar (or 3/4 if you like sweet)
1/3 cup cocoa powder (I like dutch)
1/3 cup semisweet chocolate chips (or other type of chocolate you like, chopped up)
2 1/2 tbsp cornstarch + some cold milk to make slurry
1 tspn vanilla extract
dash salt
Stir frequently throughout this process. Except for the cornstarch and chocolate chips, put all ingredients in a pot and heat on medium heat until the ingredients mix well. It essentially becomes hot cocoa milk. Lower heat to avoid boiling, if needed. Set heat on medium-low and add the chocolate chips to melt. This gives the chocolate-y taste a big kick. In a cup with some cold milk, add the cornstarch and mix well to make a slurry. Add slurry to the pot and stir well. The cornstarch will take about a minute to seize up the mixture. Your done. Pour equal portions into cups and let chill 4-6 hours (overnight is best).
Since the recipe is relatively very light, you can indulge with whipped cream on top or just kick back and enjoy your guilt-free pudding. What’s not to love?!
