Shroomburgers with Bacon Mayo and Caramelized Onions

Oh my freakin gawd you guys!  Bacon! Mayo! I was reading a post by Mark Bittman recently that involved rendering the fat from bacon to make homemade mayo. 

Needless to say, I fell instantly in love with the idea of using bacon to flavor mayo.  I mean, who wouldn’t?  You’d have to be nuts to not like that!  So, seeing as how I was making shroomburgers yesterday, I decided to give this delectable little idea a whirl.   I think this stuff is the best thing since I don’t know what.  It went GREAT on the burgers, and I am convinced it would be good on anything.  Sandwiches, dip, chicken, fries… see where I’m going with this, right? lol I did have a little trouble getting the mayo to emulsify, but I kept at it, and wound up using a little sunflower oil to help it along. I didn’t follow the recipe exactly, either…I didn’t use mustard, and changed out lemon juice for red wine vinegar, and added garlic. Of course.

The Shroomburgersare one of my favorites. I can’t believe I haven’t posted them yet! First, saute up some delicious garlicky shrooms, then toss it in with the meat to make a fabulous juicy burger. Is your mouth watering yet? lol

Ingredients for Bacon Mayo:

1 egg
3 cloves garlic
sea salt to taste
1/2 cup (about) sunflower oil
1/2 cup (about) bacon fat (liquid, but cooled)
1 tablespoon red wine vinegar


Add the egg, garlic and salt to your food processor and turn it on.
Slowly, pour in sunflower oil in a thin, steady stream.
When it begins to emulsify, begin to add the bacon fat in a thin steady stream until thick.
Keep the processor running and add the vinegar.
Use on everything.

Ingredients for Shroomburgers:

2 tablespoons butter
3-4 cloves garlic, minced
3 cups mushrooms, chopped
salt and pepper to taste
1 1/2 pounds ground beef
1 egg
garlic powder to taste
minced onions to taste
salt and pepper to taste
6 burger buns
to serve, garnish with bacon mayo, caramelized onions and bacon, plus lettuce, tomato, etc…


Melt butter over medium high heat, and saute garlic until golden.
Add mushrooms and season with salt and pepper, stirring around to coat.
Cover and reduce heat to low, stirring occasionally, until shrooms are beginning to brown.
This will probably take about 15 minutes.
Allow to mostly cool.
In a large bowl, combine garlic shrooms, ground beef, egg, garlic powder, onions, salt and pepper and mix to thoroughly combine.
Grill or fry burgers about 4 minutes per side for medium well.

  9. It looks incredible, Nikki! I thought shroomburgers were vegan burgers made of mushrooms, but of course beautiful ground beef is always welcome in my tummy :)

  11. if ever i was gonna like a variety of mayo, it’d be bacon mayo–what a notion! and if ever i was gonna like mushrooms, it’d be as this burger. at least i like the caramelized onions, although it’s probably not best to eat those plain… :)

  12. OK Nik, I have to say that I really loathe mayo. But bacon mayo? I could probably get behind that. I mean, bacon fat can be added to dirt and it would probably be tasty. And these mushroom burgers look incredibly yummy. Mmmmmmm.

  18. Yikes, that would be soooo good with hot-from-the-fryer french fries! I’m just wondering, what does refrigeration do to the mayo since bacon fat gets solid when cold?

  33. You had me at caramelized onions. Seriously. But the bacon mayo and mushrooms sealed the deal. To put it more accurately, they signed, sealed and delivered the deal in a gift-wrapped box with sparklers for a bow! Wow!!

  36. Heaven,I’m in heaven!! I have a guilty pleasure of frying my tomatoes in bacon fat. Now I can use it to make mayo and put it on a burger that has mushrooms in it!! Then I add caramelized onions on top of this? Life can’t get any better !!!
