Happy Thanksgiving! Remember to save those turkey bones!

For the Turkey and Wild Rice Soup of course!

As traditional as turkey is on Thanksgiving, you’ve got to admit that turkey and wild rice soup is also tradition for the leftovers! You know I’m a soup ho anyway, but this is one of those soups that only gets made once, *maybe* twice a year at my house. I mean, we just really don’t have a roasted turkey that often, pretty much only on Thanksgiving, and perhaps Christmas as well. As our Thanksgiving turkey dwindled down to the bones the other day, I was oh so nonchalantly pushing the pork roast towards the center of the table, and ever so sneakily easing what was left of the turkey to the sidelines. Why? So I’d have lots of meaty turkey goodness to throw into my soup, of course! I managed to save both of the wings and thighs, plus whatever slim pickings were left on the bones. I couldn’t wait to start them simmering and bubbling on the stove the next day for the homemade stock. This recipe makes quite a lot (like a gallon or so), so you might wish to adjust according to your wants and needs. Also? This is one of those things that I just sort of winged it, so ingredient amounts are approximate, k? :)

Ingredients:

1 turkey carcass
1 1/2 gallons water
1 large onion, quartered
1 carrot, peeled and halved
1 stalk celery, halved
5-6 cloves garlic
1 bay leaf
thyme to taste
salt and pepper to taste
leftover turkey meat, chopped or shredded
3 large potatoes, peeled and roughly diced
1 large onion, chopped
2 carrots, peeled and diced
2 ribs celery, sliced
chopped mushrooms
2-3 cups wild rice mixed with white rice (that’s all we have around here, folks)
1 can evaporated milk (14 oz/300ml maybe?)
flour and water slurry to thicken

Preparation:

Bring the first 9 ingredients to a rolling boil, then cover and reduce heat to a simmer.
Allow to simmer for at least 2 hours, if not longer.
Strain, and separate out any meat scraps you can gather.
Cool broth and refrigerate overnight.
Remove layer of fat from broth and discard.
Add remaining ingredients (except evaporated milk and flour slurry) and bring to a boil.
Again, cover and reduce to a simmer, stirring occasionally until vegetables are tender and rice is cooked through.
Add evaporated milk and flour slurry to thicken to taste.
Adjust seasonings and serve!

    Unfortunately there are no bones in my turkey breast roast. :P (I can only imagine that I grabbed it by mistake and meant to get the whole breast) Oh well, it will be just fine for the three of us.

    Do you by chance have a vena de vaca (veggie stuffed beef tenderloin) recipe?

  12. Ha! I did the same thing with my family’s turkey bones: I discreetly packed up both drumsticks and the carcass and spirited them away so that I could make stock today :) Soup is the best way to transform turkey leftovers in my opinion!

  19. My sister and I were talking about “Turkey Frame Soup” while cleaning up on Thursday. Mostly about the people who freak out when you use the word “carcass”. We decided to call it “Turkey Corpse Soup” this year–just for them, and your’s looks amazing!

    Do you ever throw the bones back into the oven and roast them before starting your broth? Lizzie B. taught me that trick a few years ago, and it adds so much flavor!!!
